Paprikas Csirke (Chicken Paprikash)



Ingredients:
3 half boneless chicken breasts, cut in bite size pieces
1/2 cup flour
3 Tablespoons Hungarian Paprika
1/4 teaspoon salt
1/16 teaspoon pepper
3 Tablespoons olive oil
1 cup chopped onions
1/8 teaspoon ground red pepper, cayenne
2 cups chicken broth
1 cup sour cream

Directions:



Combine flour, 2 Tablespoons Hungarian Paprika, 1/4 teaspoon salt and pepper. Add cut up chicken to flour and mix so that the chicken is completely covered. Remove chicken and set aside. Reserve remaining flour for use later.




Add oil to large frying pan. Add chicken and brown on both sides. Remove chicken from the pan.




Add a little oil to pan and sauté the onion until tender.




Put the chicken into a large pot, and add the onion, red cayenne pepper, 1 Tablespoon paprika, a few pinches of salt and the chicken broth. Bring to a boil, reduce heat, cover and simmer about 30 minutes, or until chicken is done. Remove from heat and let it cool.




Combine reserved flour and 1/2 cup sour cream. Then add a small about of cooled Paprikash liquid and mix until smooth.




Add to mixture in pot, stirring constantly until it thickens. Add remaining 1/2 cup sour cream, stirring constantly.




Serve over rice or noodles. (wide egg noodles or Hungarian Nokedli (Spaetzel) Noodles)
Servings: 6 (4 times the recipe to serve 25)
